Natto toast with kimchi and cheese.

Natto on toast might sound unusual at first, but trust me, it actually works!

I started making this when I was trying to find quicker, more flavorful ways to enjoy natto in the morning, especially on days when I had zero time and needed something easy and satisfying.

This version uses kimchi and cheese to soften the strong natto flavor so even natto haters can ease into it. If you want an even milder option, try my natto niku miso, natto fried rice, natto dressing, or natto salad. They have a gentler natto taste and are great for beginners.

You can also play around with variations like avocado, eggs, or tomatoes if you want a more protein rich or veggie packed twist.

  • Less natto taste: I added umami packed ingredients like cheese, kimchi, and a little ketchup to soften the bitter notes, so you can enjoy this even if you aren’t a big fan of natto.
  • Fermented food packed for a happier gut: Both natto and kimchi are fermented foods, which means they’re great for your gut. Fermented ingredients also taste amazing together, so the flavor is a win too.
  • Versatile: This toast is so easy to customize. Add avocado, scrambled eggs, tomatoes, or anything you think pairs well with natto.

  • Natto: Usually found in the frozen section of Asian grocery stores in the U.S. Let it defrost in the fridge overnight before using.
  • Nori seaweed: Often available in the Asian section of most grocery stores.

How to Make Natto Toast

Mince the kimchi and natto.

Step 1: Mince the kimchi and natto if you like.

Mix natto, kimchi and seasonings.

Step 2: Mix natto and kimchi with mustard and ketchup.

Make sunny side up in a microwave.

Step 3: Make a sunny-side-up egg in a microwave.

Top with toppings and bake until the cheese is golden brown.

Step 4: Place a sheet of nori on a slice of bread. Top with canned tuna and the natto-kimchi mixture, then add the egg and cheese. Toast until golden, and finish with a light drizzle of sesame oil.

Storage Instructions

I recommend enjoying this right after it’s made. Natto toast doesn’t keep its texture well, so it’s best eaten fresh.

Ingredients
  

  • 1-1.5 tablespoons minced kimchi
  • 1 pack natto including mustard packet
  • 1-2 teaspoons ketchup
  • 1 slice bread
  • 1 large egg
  • 1 piece nori
  • 2.5 ounce canned tuna drained
  • Shredded cheese
  • ¼ teaspoon sesame oil

Method
 

  1. Preheat your oven to 450°F or your air fryer to 400°F.
  2. Prep the natto and kimchi: Mince kimchi and natto if you prefer smaller pieces, skip if you don’t mind chunkier textures.
    1-1.5 tablespoons minced kimchi, 1 pack natto
  3. Mix the filling: Combine natto, kimchi, mustard from the natto packet, and ketchup in a bowl or directly in the natto container.
    1-2 teaspoons ketchup
  4. Pre-toast the bread: Toast the bread for 3–4 minutes, or until lightly golden.

  5. Cook the egg: In a small microwave-safe bowl or plate, add 1 teaspoon of water and crack in the egg. Poke the yolk three times with a toothpick (or gently poke three holes with a fork), then microwave for about 30 seconds, just until the whites are set and the yolk stays runny. If needed, cook in additional 10-second increments, checking often.

  6. Assemble the toast: Tear the nori into smaller pieces so it’s easy to bite, then layer them on the bread. Top with drained canned tuna, the natto-kimchi mixture, the egg, and a generous sprinkle of shredded cheese.

  7. Bake or toast: Toast in the oven or air fryer for 5–8 minutes until the cheese is golden brown and bubbly.
  8. Finish and serve: Drizzle with sesame oil and enjoy immediately for the best flavor and texture.
