Method
- Slice the onion: Thinly slice ¼ onion.
- Mix everything: In a microwave-safe bowl, combine the onion, 3 ounces tofu (torn into small bite-size chunks with your hands), ¼ canned tuna (remove excess water well), 1 tablespoon mirin, ½ tablespoon soy sauce, and ½ teaspoon dashi powder. Mix well until combined.
- Microwave: Cover and microwave for about 3 minutes, until the onion is translucent.
- Add egg: Beat 1 large egg in a small bowl. Stir the tofu mixture in the medium bowl once more, then pour the beaten egg over the top. Do not stir!
- Microwave: Cover and microwave for about 30 seconds, until the egg is cooked to your liking.
- Serve: Spoon the tofu and egg over cooked rice. Garnish with minced green onions, shredded nori seaweed, and shichimi, if you like. Enjoy!
