- Tofu: You can use pretty much any kind of tofu here. Silken tofu will melt into a soft, delicate texture, while firm tofu gives you that nice, satisfying chew, so just pick your favorite mood of the day.
- Dashi powder: If you can, go for a natural dashi powder like Kayanoya. It doesn’t have those artificial extras, and it really makes the flavor taste clean.
- Shichimi: Shichimi is a traditional Japanese spice blend meaning “seven-flavored chili pepper.” I love adding it to sweet-and-savory donburi like this! If you visit Nagano, I highly recommend checking out a famous shop called Yawataya Isogoro where you can blend your own custom shichimi 🙂
How to Make Tofu & Egg Donburi

Step 1: Slice the onion thinly.

Step 2: Mix the onion, tofu chunks, canned tuna, and seasonings in a microwave-safe bowl. Cover and microwave for 3 minutes.

Step 3: Mix again, pour in beaten egg (don’t stir), cover, and microwave for about 30 seconds.

Step 4: Serve over rice, top with green onions, and enjoy!

- Mix everything: In a microwave-safe bowl, combine the onion, 3 ounces tofu (torn into small bite-size chunks with your hands), ¼ canned tuna (remove excess water well), 1 tablespoon mirin, ½ tablespoon soy sauce, and ½ teaspoon dashi powder. Mix well until combined.
- Microwave: Cover and microwave for about 3 minutes, until the onion is translucent.
- Add egg: Beat 1 large egg in a small bowl. Stir the tofu mixture in the medium bowl once more, then pour the beaten egg over the top. Do not stir!
- Microwave: Cover and microwave for about 30 seconds, until the egg is cooked to your liking.
- Serve: Spoon the tofu and egg over cooked rice. Garnish with minced green onions, shredded nori seaweed, and shichimi, if you like. Enjoy!
