Some mornings, I crave a cozy Japanese breakfast but don’t have time to cook. That’s when this tofu & egg donburi saves the day!

It tastes like oyakodon with a slightly sweet and savory flavor, but with soft tofu and canned tuna for a lighter twist. Ready in just 10 minutes with only a microwave.

It’s the perfect Japanese tofu breakfast recipe, especially when paired with miso soup and side dishes like sunomono for more balanced nutrition.

Ingredients to make Japanese tofu and egg donburi rice bowl.
  • Tofu: You can use pretty much any kind of tofu here. Silken tofu will melt into a soft, delicate texture, while firm tofu gives you that nice, satisfying chew, so just pick your favorite mood of the day.
  • Dashi powder: If you can, go for a natural dashi powder like Kayanoya. It doesn’t have those artificial extras, and it really makes the flavor taste clean.
  • Shichimi: Shichimi is a traditional Japanese spice blend meaning “seven-flavored chili pepper.” I love adding it to sweet-and-savory donburi like this! If you visit Nagano, I highly recommend checking out a famous shop called Yawataya Isogoro where you can blend your own custom shichimi 🙂

How to Make Tofu & Egg Donburi

Slice the onion thinely.

Step 1: Slice the onion thinly.

Mix sliced onion, tofu, canned tuna, and seasonings well.

Step 2: Mix the onion, tofu chunks, canned tuna, and seasonings in a microwave-safe bowl. Cover and microwave for 3 minutes.

Pout egg on top of onion, tofu, canned tuna mixture.

Step 3: Mix again, pour in beaten egg (don’t stir), cover, and microwave for about 30 seconds.

Place the tofu and egg mixture on the cooked rice.

Step 4: Serve over rice, top with green onions, and enjoy!

Kurumi's Tips

  • Don’t stir after adding the eggs: We want to create that beautiful, oyakodon-style egg layer, so leave it as is!
  • Play around with protein: You can swap the canned tuna (and/or tofu) for other proteins like imitation crab, canned chicken, or fish to make different variations.

What to Serve with Tofu & Egg Donburi

Because this donburi doesn't contain enough veggies, I like to serve it with miso soup and other veggie-packed side dishes that don't taste sweet-and-savory, such as sunomono.

Ingredients
  

  • ¼ onion medium
  • 3 ounces tofu
  • ¼ canned tuna
  • 1 tablespoon mirin
  • ½ tablespoon soy sauce
  • ½ teaspoon dashi powder
  • 1 large egg
  • 1 serving cooked medium or short-grain rice
  • Minced green onion optional
  • Shichimi optional
  • Shredded nori seaweed optional

Method
 

  1. Slice the onion: Thinly slice ¼ onion.
  2. Mix everything: In a microwave-safe bowl, combine the onion, 3 ounces tofu (torn into small bite-size chunks with your hands), ¼ canned tuna (remove excess water well), 1 tablespoon mirin, ½ tablespoon soy sauce, and ½ teaspoon dashi powder. Mix well until combined.
  3. Microwave: Cover and microwave for about 3 minutes, until the onion is translucent.
  4. Add egg: Beat 1 large egg in a small bowl. Stir the tofu mixture in the medium bowl once more, then pour the beaten egg over the top. Do not stir!
  5. Microwave: Cover and microwave for about 30 seconds, until the egg is cooked to your liking.
  6. Serve: Spoon the tofu and egg over cooked rice. Garnish with minced green onions, shredded nori seaweed, and shichimi, if you like. Enjoy!
